What's for dinner tonight?

I am having my cousin over for some dinner and some WII dancing! I decided a little Mexican Monday and threw together some buffalo chicken quesadillas and black beans and rice. Here's my recipe for buffalo chicken quesadillas...

Serves 4
3 boneless chicken breasts, cut into bite size pieces
4 tablespoons flour
Frank's buffalo hot sauce
1 1/2 cups crumbled blue cheese
2 cups shredded monterey jack
6 tortilla shells
salt and pepper
2 tablespoons oil
sour cream, salsa and guacamole to serve

Heat the oil in a nonstick skillet on medium high heat. Coat the chicken in the flour and place in the pan. Let chicken cook about three minutes on each side, they should be golden in color. Season with salt and pepper and place cooked chicken in mixing bowl. Pour about 3/4 cup Frank's hot sauce all over the chicken ensuring each piece is covered (do this when the chicken is still hot, the chicken will absorb the flavor more when it is hot). Preheat oven to 350 degrees. Brush two sheet pans with olive oil. Build quesadillas by laying out tortilla shells and layering monterey jack, chicken then the blue cheese on one half of the shell and fold over the other half. Place on pan and repeat until you have completed all six shells. Cook in oven about fifteen minutes, flipping about eight minutes in. They should be golden and the cheese should be melted. Serve with sour cream, salsa and guacamole or your favorite blue cheese dressing. Enjoy!!
